Cocoa in Colorado

This week I’ve been lucky enough to head to Steamboat Springs in Colorado, USA to hang out with my family and some very old friends. It’s been 12 days of skiing, eating, hot tubs and soaking up the mountain life!

I’m not much of a sugary-drink guy, but when you’re sitting on chairlifts in snowstorms, exercising in sub-zero temperatures and often can’t feel anything below your ankles, it’s pretty tempting to grab yourself a cup (or two) of the good stuff.

Since the hot chocolate they’re making here is super sweet and rich, I decided to knock  up a simple, sugar-free version you can enjoy much more regularly!

I used super-dark chocolate with no sugar, and regular milk, but you can always substitute milk chocolate, or add in some good quality maple syrup for natural sweetness. Make it vegan by using your favourite plant-based milk too!


  • 300ml milk (Your favourite kind – dairy or plant-based)
  • 1 tbsp cocoa powder
  •  25g dark chocolate
  • 1/4 tsp cinnamon
  • 1/2 tsp corn flour / cornstarch
  • 1 pinch sea salt

Heat the milk in a microwave or on a stove and add to a thermos. Break up the dark chocolate and add to the hot milk – give it a quick shake to melt it.

Add the remaining ingredients to your mug and stir with a splash of the hot milk until smooth and combined.

Pour the mixture back into the thermos, shake for 30 seconds and pour the frothy, luscious hot chocolate into your mug! Feel free to enjoy as is, or top with anything you like!
